In a few words ...
In our search for a terroir that would enable us to produce a Merlot for varietal vinification, we discovered that a parcel in the Struma valley produced grapes of the necessary quality. From a selection of these best grapes we obtain a rich, complex wine. Its distinctive character and expressive finesse are acquired after 12 months' aging in French oak barrels. The winemaking process The harvest for this wine took place on September 11. The grapes were hand-picked and transported in crates. The grapes were first selected in the vineyard, then on a double sorting table as soon as the crates arrived at the winery. On the first table, we selected the bunches, and on the second, the berries after destemming. Maceration lasted 25 days, followed by fermentation at 25-30°C in stainless steel tanks. Aging took place in French oak barrels, followed by 6 months' bottle ageing.
