Conomladi Melnik 2008 The Melnik grape is a unique variety, grown only in south-western Bulgaria, in the Struma valley. In this wine, aimed at connoisseurs, we have harmoniously blended the unique character and rich, diverse flavors of this grape variety. Winemaking A dry red wine, vinified from grapes selected at full maturity, harvested on September 22. The winemaking techniques have been specially developed by Stoycho Stoev for this variety, and the potential of these grapes. They are first sorted twice, in the vineyard and in the winery on a double sorting table. On the 1st table, bunches are sorted and destemmed, while on the 2nd, damaged and immature grapes are removed. Maceration for 18 days. Fermentation in stainless steel tanks at 28-30°C. Aged 2 months in oak barrels, to achieve that unique balance and flavor.
