Hand-harvested in 40 kg crates with sorting, whole-grape pressing for 10 hours, static decanting of juice for 24 hours, temperature-controlled alcoholic fermentation with indigenous yeasts for 2 to 3 months, aged on fine lees until early September, after which the wine undergoes fine filtration before bottling. The wine undergoes no fining, chaptalization, acidification or enzyming.
