The grapes are harvested entirely by hand. After the grapes are meticulously sorted, crushed and placed in into thermo-regulated wooden vats, depending on the plot. Alcoholic fermentation lasts 7 to 10 days, and extraction is always extraction is always respectful of the juice, adjusting the number of by adjusting the number of pump-overs according to cuvées and vintages.
