In a few words ...
Only juices from the first press - the cuvées - are used. Low-pressure mechanical presses. Gravity is used to avoid pumping, which prevents oxidation. Natural settling Alcoholic fermentation for around 2 weeks at low temperature. Then natural and complete malolactic fermentation. No filtration. Blending - 100% of the wines are aged in vats to ensure maximum freshness. Minimal use of sulfur. After bottling, the cuvée is matured for 2 to 3 years on laths. Zero dosage
"The Brut Nature, made exclusively from Pinot Noir grapes, has received no expedition liqueur, as the label indicates: "zero dosage". Its flattering nose evokes warm brioche and vanilla, aromas that are confirmed in a round palate with melted oak. "A real moment of pleasure", concludes one taster.
