Produced in the cellars of the former Saint-Nicaise Abbey in Reims (13th century), Taittinger Comtes de Champagne Blanc de Blancs benefits from a succession of careful treatments right up to its peak, and is only created when the following conditions, which make it so rare, are met: Cuvée Comtes de Champagne Blanc de Blancs is made from 100% Chardonnays from the finest vintages of the prestigious Côte des Blancs. It is produced only when the harvest proves to be of exceptional quality and worthy of vintage. Only wine from the first press - the Cuvée - is used, an absolute guarantee of finesse. 5% of the wines used in the blend are aged for 4 months in new oak barrels (renewed by thirds each year), enhancing the intrinsic qualities of the final blend. It is only after 8 to 10 years of slow, patient ageing in the Crayères de Saint-Nicaise that this exceptional cuvée comes into its own.
