Dom perignon - boxed set - magnum 2008dom pérignon is a champagne brand owned by moët & chandon. The monk bénédictin dom pierre pérignon is crédit; de son invention; selon la légende, dom pierre pérignon, lors dèlerinage à l'abbaye de saint-hilaire a découvert la méthode de vinification des vins effervescents de limoux. He returns to his abbey of saint-pierre d'hautvillers and experiments the method on wines from the Champagne vineyards. He also taught his technique to the learned bishop Thierry Ruinart, who came to visit him in 1669. At the time, bottles were corked with wooden pegs lined with oil-soaked toupee. Looking for a cleaner, more aesthetically pleasing process, dom pénon came up with the idea of pouring beeswax into the neck of the bottles, thus ensuring perfect hermeticity, but after a few weeks most of the bottles would have exploded, unable to withstand the pressure. As the sugar in the wax fell into the bottle, it triggered a second fermentation, transforming malic acid into more carbonic lactic acid. The dom pérignon brand was first created by eugène mercier, founder of mercier champagne. He then sold the brand to the champagne house of moët & chandon, which used the name dom pérnon for its prestige cuvée, first launched in 1937. each vintage of dom pérnon is unique, with grapes sourced only from the finest champagne vineyards. Unlike most champagne producers, who harvest the grapes early, the practice under former cellar master Richard Geoffroy was to wait for the grapes to ripen slowly.
