With 4.5 ha of Château-Chalon out of a total of 9, Domaine Courbet is a major player in this prestigious appellation. 2019 is the first certified organic vintage for this estate, founded in 1869 and now run by Damien Courbet. All the cuvées produced by this exacting stylist show a remarkable attention to detail, with the aged wines sometimes still showing signs of ageing. It's the Savagnins sous voile that are the domain's crowning glory, among the brightest and most articulate produced today. Domaine Courbet's l'origine cuvée comes from a 0.60-hectare parcel of 40-year-old savagnin vines planted on Jurassic clay-limestone terroirs. Vinification takes place in closed tanks using indigenous flora. The wine is then aged on fine lees for 12 months. Light racking before filtration adds precision and suppleness to the wine. Bright, golden color. The nose reveals magnificent notes of buttery roasted white fruit, white flowers, apple, wet pebbles and a hint of toast. The palate is slender and taut, with a full, very fine texture.
