In a few words ...

The entire harvest is destemmed. The grapes used for this cuvée come from the oldest vines on the estate. Vinification takes place in thermo-regulated stainless steel vats, with a capacity of 50 hectoliters, over a total period of about 3 weeks, punctuated by numerous pump-overs and delestages to extract maximum color and tannin. to extract maximum color and tannin. All CHATEAU DU PRIEURE DES MOURGUES reds undergo malolactic fermentation in vats. They are then racked and put into barrels in November (French oak barrels, fine grain, medium toast). During this ageing process 6 fresh egg whites per barrel. During the ageing period, the wine is racked every 3 months. Barrel ageing: 25% new barrels, 50% one-wine barrels, 25% two-wine barrels. Aging lasts around 14 months, depending on the vintage. The wine is then removed from the barrels and homogeneously blended before bottling.
