    In a few words ...

    Hand-harvesting of perfectly ripe grapes. 40% traditional vinification, 60% whole-harvest vinification. Maceration: approx. 14 days for traditionally vinified grapes, 5 to 12 days for whole harvest. Duration defined by daily tasting. Wine racked at end of alcoholic fermentation, then placed in 225-l barrels for malolactic fermentation. First pressings added to the run-off juice. Aging: 9 months: 60% in barrels (30% new barrels, 40% 1-wine barrels, 30% 2-wine barrels) and 40% in stainless-steel tanks for freshness.

    Dark, lively colour.

    Slightly wild, vegetal nose. Notes of rhubarb, licorice, gingerbread, pear.

    Very round, velvety, gourmet attack. Creamy, fruity notes reminiscent of sour cherry clafouti.

    I'm a little disappointed by this wine. I found it rather 'closed' and aromatically a little lacking.
