Hand-picked in small crates at the end of September, when the grapes are fully ripe (late terroir). The grapes are sorted on a vibrating table and destemmed. 50% undergo traditional maceration in 50hl wooden vats without sulfur for one year. Béziers Narbonne month, then matured in 53hl wooden vats until summer. The other 50% undergo a shorter maceration phase (10 days), are devatted hot, tapped and then aged for 7 months in 1- and 2-wine oak barrels. The first addition of sulfur takes place only after malolactic fermentation.

Aroma
The nose combines fruity (blackcurrant) and spicy (licorice) aromas with lovely floral notes (violet, rose, lily). The woodiness is delicately vanilla with hints of fresh oak.
