Harvested when fully ripe, the bunches are destemmed and vinified separately with a minimum of inputs. After a pre-fermentation cold maceration (8°), extraction and fermentation take place at a regulated temperature of around 25° to preserve the fruit as much as possible. Short maceration periods are favored for tannic extraction with finesse. Early bottling to preserve aromas and freshness.
