VINEYARDS: Single Guyot pruning. PRODUCTION: 11800 bottles. WINEMAKING METHOD: Mechanically harvested. Pellicular maceration. 100% malolactic fermentation. AGEING: As at end of fermentation, on lees. No batonnage. Bottled in August. MISCELLANEOUS: Michel and Jeff noticed at the start of the harvest that swallows were gathering while they were discussing this cuvée on the Roquebrun bridge, which is why the cuvée took this name.
