In a few words ...
The grapes are harvested by hand and transported to the winery in crates. The berries are destemmed and sorted to remove all plant parts from the bunch. Pre-fermentation cold maceration lasts 5 to 8 days, with regular punching of the cap. At the start of alcoholic fermentation, pigeage (punching down of the cap) is carried out, then gradually, in order to better control the extraction of aromas and tannins, it is replaced by remontage (pumping over). In the end, maceration lasts around 3 weeks. A delicate pneumatic press is used to separate the run-off juice from the press juice. The run-off juice is kept cold for 24 hours before being put into barrels. Malolactic fermentation and 9-month aging take place in oak barrels. Finally, the wines from the different barrels are blended together after racking. There is no filtration before bottling.

A nice surprise with this very seductive Pinot Noir. One sip leads to another. Limoux wines have made good progress with Gérard Bertrand. A successful wine, full-bodied yet light, balanced, spicy and floral. A nice little nugget!
