Made from 30-year-old gobelet vines on Trias terroir (secondary soil). The parcel covers 2.06 hectares and produces 7,000 bottles per year. Hand-picked very early in the morning. Direct pressing. Gravity settling. Cold pre-fermentation maceration for 8 hours. Fermentation in temperature-controlled stainless steel tanks. Low-sulfite bottling.
