In a few words ...
30-year-old vines. The young vines are harvested and vinified to produce this dry, fruity cuvée of the year. Pressing is direct and rapid to avoid oxidation. The juices ferment slowly in full vats, without the addition of yeast (the wine is kept on lees for several months to 1 year), and bottling is carried out without the addition of sulfur, vat by vat.
