Harvested at night, the Syrah, Grenache and Mourvèdre grapes are pressed and immediately chilled (8°c). After 24 hours, the juice is placed at 8°c for at least 5 days before settling and fermentation. At the end of fermentation, the wines are racked and aged on fine lees, with frequent suspension of the lees.
