Location: A collection of plots located around the Fuissé amphitheatre, representing the diversity of the village's soils. Age of vines: 10 to 50 years. Average age 35 years. Soil: Partly granitic, with about 1/3 west-facing schists, volcano-sedimentary sandstones and rhyolitic tuffs, the other 2/3 west-facing limestone and marl. Vinification and ageing: 1/3 in stainless steel vats and 2/3 in barrels. Barrels for 1 to 4 wines. The wine is first matured for 8 months, either in barrels or in vats, depending on the plot, and then blended. The cuvée is matured for a further 5 months, once it has been blended.
