In a few words ...
Part of the grapes are pressed, the remainder drained from the vat (saignée). After pressing, the juice is chilled under CO2 for settling, then racked and prepared for fermentation. The bled juice is drawn off after 48 hours (pre-fermentation), cold settled and blended with the press juice. Temperature-controlled fermentation without exogenous yeasts.

Appearance
The intense pink color brings this wine closer to naturalness, as it has undergone very little processing to obtain a standard product.

Vintages may vary according to harvesting conditions. The clay-limestone terroir brings out the minerality and red fruit aromas.
