In 2016, after more than 30 years of experience in Burgundy, Pascal Guillemier chose to settle in Caunes-Minervois to give life to a project that resembles him: create authentic wines and respectful of nature.

Nestled at the foot of the Black Mountain, its domain extends over twenty hectares certified HVE, worked with requirement and passion. On these marble, limestone and schist soils, he cultivates Carignan, Grenache, Syrah, Cinsault and Mourvèdre, which he carefully elevates to reveal all the richness of the terroir.

Domaine Ampelous reflects the story of a passionate winemaker who transforms his know-how into generous, elegant and sincere cuvées.

Each wine from the Maison Arnaud Boué is a living story: that of Arnaud himself.

From the arrival of Michel Chapoutier at the head of the family business in 1990, the estate began the conversion of its vineyard to biodynamic agriculture. Over time, Michel Chapoutier acquired numerous vineyard plots in many places around the world: Australia (1998), Portugal (2007), Spain (2016) but also and especially in France. It is established and produces wine in Roussillon, Alsace, Lyon, Provence, Beaujolais and in the Gard with multiple estates and cellars.

Mrs Müller is an alcoholic beverage distilled from a neutral spirit that has been distilled a second time with juniper berries, then infused with a secret blend of medicinal plants. This aperitif is intended to be enjoyed before a meal, to stimulate the appetite. Inspired by nature in the Cape region of South Africa, it is made from rooibos, elderberries, blackberries, wild strawberries, wild apples, rose buds and petals, lavender and dried orange peel.

Serve pre-chilled, without ice... by freezing the bottle and serving directly from the frosted bottle...

Cape Garden Cocktail

Ingredients:

• 50 ml Mrs Müller gin (South Africa)
• 20 ml fresh lemon juice
• 15 ml sugar syrup (or honey)
• 5 fresh basil leaves
• 10 ml elderberry liqueur (optional, for a floral note)
• Sparkling water
• Ice cubes
• Cucumber slice or lemon zest for garnish

Recipe:

• In a shaker, add Mrs Müller gin, lemon juice, sugar syrup and basil leaves.
• Shake well to infuse the basil flavors.
• Pour into a glass filled with ice cubes.
• Top up with sparkling water.
• Add a splash of elderflower liqueur for a floral touch, if you like.
• Garnish with a slice of cucumber or lemon zest for an elegant presentation.

Today, Maison Simonnet-Febvre produces & ages a wide range of wines expressing the different terroirs of the Chablisien and Grand Auxerrois regions. Maison Simonnet-Febvre was founded in 1840 by Jean Febvre. A traditional Chablis estate, Jean Febvre began by vinifying Chablis Mousseux, the forerunner of the future AOC Crémant de Bourgogne. Today, the estate remains the only one in Chablis to continue making Chablis Mousseux using the traditional method.

Simonnet-Febvre's terroir is quite diverse, reflecting the four vineyards that make it up: the Chablis vineyard, the Crémant de Bourgogne vineyard, the Grand Auxerrois vineyard and the Coteaux de l'Auxois vineyard.

On 17 hectares of schist slopes in AOP Faugères and some 20 hectares in AOP Languedoc, as well as on land in IGP Côtes de Thongue, 12 different grape varieties are grown. Domaine Tour Saint Michel has been a family estate for three generations. First, Michel Fabre, who founded the estate in 1930, passed on his passion for wine to his son Henri. With the help of his wife Eliane, Henri developed and expanded the estate to 40 hectares, including 35 hectares of Châteauneuf-du-Pape. Today, their daughter Mireille manages the vineyard, respecting the family tradition while bringing a more modern style.

Founded in 1830, Clos Triguedina is today one of the leading estates in Cahors.

Domaine Lafage is a family estate dating back to 1798. Its vineyards stretch from the shores of the Mediterranean to the foothills of the Pyrenees, in the heart of Roussillon. It is divided into three distinct terroirs representing the nuances of the Roussillon soils.

The Lafages have been winegrowers for over two centuries. Before taking over the family estate, Jean-Marc Lafage and his wife Éliane studied oenology and participated in harvests and vinifications in Australia, California, Latin America and South Africa.

Château des Fougères Clos Montesquieu is a château that once belonged to the philosopher Montesquieu, located on the left bank of the Bordeaux vineyards in the commune of La Brède. It produces AOC Graves red wines. The estate is overseen by the team of world-renowned oenologist Derenoncourt, and the world's leading natural extracts group Biolandes is involved in its development. The vineyard has a total surface area of 13 ha, made up of Cabernet Sauvignon and Merlot.
