Vinification is carried out by gentle direct pressing to rapidly extract the free-run juice and the first press juices. Tasting notes: Appearance: a bright, limpid peach color. Nose: fruity and delicate, with fresh citrus notes. Palate: round and supple, with good structure. Food pairing: Mediterranean, Provençal and Oriental cuisine. 30% grenache, 30% merlot, 40% cinsault. Harvested at night, thermo-regulated fermentation, eraflage, settling, crushing, clay-limestone soils.
