eric bordelet took over the family business in 1992 in southern normandy, on the armorican massif, in the domfrontais extension on the borders of mayenne and orne. Trained as a sommelier and with a long apprenticeship with leading names in the restaurant and wine worlds, he restructured the estate and took it to the next level of excellence. The vineyard is located on Upper Brioverian schist, a "grand cru" sedimentary rock dating from the Precambrian era, 3 billion years ago. These are normally fairly soft rocks (granite, "argelette" shale, the fusion of the two elements making up the complexity of the soil and subsoil) giving rise to silty or silty-clay soils. Hand-harvesting in paloxes, selective according to fruit ripeness, takes place from September to December, due to the large number of varieties. Each fruit is carefully processed, assembled, coarsely crushed, gently pressed, settled and racked. Natural, ancestral fermentation in vats or barrels, and bottled over several weeks or months, depending on the vintage.
