"La Clape is the only appellation based on the Bourboulenc grape. the appellation's reputation for its white wines, bringing tension and freshness. It makes up half of this blend with Grenache blanc for its fruit and Roussanne and Marsanne for complexity." Eric Fabre Harvest: Parcel harvest spread over two months, according to grape maturity. Grapes sorted before vatting. Vinification: Total de-stemming, slow pressing, gravity-fed vatting, each grape variety vinified separately. Double settling, temperature-controlled fermentation. Aging: Bâtonnage on fine lees in concrete vats for 4 to 5 months, natural stabilization, static clarification by gravity, no fining or filtration.
