In a few words ...
Hand-harvested, whole bunches pneumatically pressed, followed by cold settling. Thermo-regulated fermentation with indigenous yeasts in glass-lined cement tanks. Aged on lees for 4 months to preserve the freshness and liveliness associated with the strong presence of carbon dioxide, a natural by-product of alcoholic fermentation.
