In a few words ...
The grapes are macerated and fermented for 6-9 days in open vats. The vats are racked or pumped over 2-3 times a day to extract the desired tannins and color. Temperature is controlled throughout the vinification process to preserve all the aromatic qualities of our wines. Malolactic fermentation takes place naturally. The wine is bottled at the estate, generally in the spring following the harvest.
