In a few words ...
Fresh and aromatic, with citrus notes and spicy touches of garrigue herbs such as thyme and rosemary, complemented by a fine minerality on the finish. The medieval village of saint guilhem le désert is well worth a visit and is steeped in history. It is a unesco World Heritage Site, part of the Camino de Santiago de Compostela. The vast vineyards lie at the foot of the Seranne and Mont Baudille mountains, alongside olive groves. The first vines in this region took root at the foot of the producer of this wine, the cave de fonjoya. The winery was founded in 1950 as a cooperative of several winegrowers in order to work the markets better and make wine more efficiently. The aim then, as now, was to have a well-equipped winery and a technically modern, high-performance production facility. The vineyards lie at the foot of the Larzac plateau, some 160 meters above sea level. A dry summer climate limits yields. Rigorous discipline, both at harvest and in the cellar, enables us to produce wines under optimum conditions. Allergene:enthält sulfite
