In a few words ...
Our CHARDONNAY vines have an average age of 31 years. They were grafted in 1990. Vinification takes place in temperature-controlled stainless-steel vats for 15 days at a temperature of 17-18° C (30% of the harvest), with the other half vinified in new barrels. The CHARDONNAY that has been vinified in barrels is then racked. The coarse lees are eliminated, and only the fine lees are retained for use during barrel ageing, punctuated by regular stirring of the lees. This aging process lasts an average of 6 months on average. The wines are then blended before bottling.
