Domaine jean macle - château chalon - vin jaune 2011le domaine jean macle is a vineyard that was created in 1850. The estate is located in the heart of the village of château-chalon in the jura region. Laurent Macle has been managing this prestigious 12-hectare vineyard since 1995. The domaine jean macle comprises 12 hectares of 100% white vines: 8 hectares of chardonnay and 4 of savagnin. The estate's two aoc wines are aoc côtes du jura and aoc château-chalon. For several years now, jean macle and his son laurent have been working their vines organically. No insecticides, fungicides or systematic products are used. The grapes are harvested by hand, and after alcoholic and malolactic fermentation in vats, the wines are yeasted in oak barrels under a veil of yeast. Domaine Jean Macle produces wines of great beauty, and their chalon is one of the most sought-after in the world. This 2011 Chalon yellow wine will give you a great sense of motion in the glass. On the palate, you'll experience an extravagant dry extract that will be so today, but also many decades from now. Perfectly typified, with lovely mellow aromas of green almond, acacia, williams pear brandy, curry and walnut;
