In the heart of the Cabardès PDO, an appellation marked by alternating westerly and easterly winds, the vineyards climb the sunny, rocky slopes of the southern Montagne Noire, from 230 to 360 meters above sea level. The harvest is finely sorted. Vinification is carried out by grape variety, followed by long maceration (25-30 days) with very gentle extraction. The wine is aged in barrels.
