Vinification takes place in temperature-controlled stainless steel vats, with a capacity of 100 hectoliters, over a total period of around 15 days, punctuated by numerous pump-overs and delestages to extract maximum color and tannin. All CHATEAU DU PRIEURE DES MOURGUES reds undergo malolactic fermentation in vats. In November, 40% of the cuvée is racked into barrels (French oak, fine grain, medium toast). During the ageing period, the wine is racked every 6 months. Barrel ageing: 40% one-wine barrels 60% two- and three-wine barrels Aging lasts approximately 12 months. The wine is then removed from the barrels and homogeneously blended before bottling.
