The domaine de chassorney, located in saint-romain in the hills above the côte de beaune, is renowned for its natural, respectful approach to vines and wine. Founded by frédéric cossard and now run by aurélien verdet, the domaine covers several burgundy appellations and cultivates its plots using organic methods. The vines are worked entirely by hand, and the vinification process emphasizes the finesse and expression of the terroir. The wines are matured in vats or ovoid eggs, allowing gentle micro-oxygenation and limiting intervention, to produce pure, elegant and easily digestible wines. Cuvée saint-romain "combe bazin" 2023 is a white wine made from 100% chardonnay grapes from organically farmed plots. Grapes are harvested by hand, and vinification is carried out with indigenous yeasts, without heavy filtration and with minimal use of sulfur. The wine is aged in old barrels, and sometimes in ovoid eggs, to preserve its fruitiness and freshness, while adding structure and complexity.
