In a few words ...

Strange to call a wine by a cow's name. Not so strange when you know Laïs, a Jersiaise, in Catalan country. That pretty much sums up the wine. All the freshness and vivacity of the north, combined with the richness of the Mediterranean. Maccabeu, Grenache Blanc and Gris on schistose slopes with varied exposure make up this blend. Fermentation and ageing take place in new one- or two-wine barrels for eight to ten months. Some of the wine is even matured in 600-liter demi-muids. In keeping with the spirit of respect for the grape, the wood is discreetly used to reveal fresh floral notes. You can drink this wine in its youth, for its lively aromas and mouthfeel, or wait to be surprised by its highly mineral evolution.
