After training in the fine arts, alexandre jouveaux worked as a fashion photographer for chanel until 1996, when he decided to become a winemaker in burgundy. It was in uchizy that he set up his domaine. In 1999, he acquired his first plots in prety. He now owns other plots in Viré and Tournus. The plots are planted mainly with Chardonnay, with a little Pinot Noir and Gamay. Tired of the administrative constraints involved in obtaining appellations, alexandre decided to produce his wines as vin de france. The winemaker decided to cultivate his vines organically, using gentle intervention. Production is intimate, with only 6000 bottles produced each vintage. The grapes are harvested by hand in small crates. Fermentation takes place naturally in foudres, where the wines are aged before being bottled by gravity. Sulfur is used in minute doses. Domaine des Fauvettes' cuvée de l'aube à l'aube comes from an east-west-facing plot of Pinot Noir planted in 2012 on clay-limestone soils. The cevin nose reveals sublime notes of
