Harvested early in the morning (between 3 and 9 a.m.) to take advantage of the cool nights. Delicate pressing, aged on fine lees for 5 days, followed by settling and fermentation at 17°. Aging: 5 months in vats. Foaming and ageing for 9 months before disgorging.
