Depending on the vintage, the wine is either rested during the winter, to promote stability (in color, aroma and acid balance), or stirred to promote yeast-wine contact: this also contributes to the natural stabilization of the wine, but also, if the year is right, to amplify the wine's structure and volume.

Aroma
Aromas of great finesse, very typical, citrus (lemon, citron), fruit (pear, peach), flowers (white flowers, lime blossom, nettle). The granite terroir of Grand Cru Wineck Schlossberg favors an original and unique aromatic evolution towards mineral aromas: gunflint, flint, "petroleum". This is the terroir's signature for this great grape variety.
Taste
The palate is built on an acidic backbone that gives it freshness and great keeping power. The mid-palate is marked by volume and a racy, delicately fruity structure.
