In a few words ...

In the 1990s, we gradually pulled up our Pinot Noir vineyards in the Herrenweg and decided to plant a small plot in the Heimbourg. At the time, we were looking for a later terroir for this grape variety, capable of preserving good acidity but also giving us the possibility of harvesting this temperamental variety later and without any major risk of early rot development. Heimbourg was an ideal choice: the deep marls preserve the grape's acidity and character. The westerly exposure and cold marls, swept by northerly winds, allow late harvesting of grapes that are still healthy and have not acquired a high alcohol content. The vineyard is planted at a high density (9,000 vines/ha) and pruned very low. Fermentation is carried out on whole grapes in open wooden vats, with very gentle manual punching of the cap. The wine is then aged for 18 months in rooms of 2 to 6 wines. A slight haze is noticeable, due to the absence of fining and filtration for this wine.
