The winemaker

The field John Paul Schmitt in Scherwiller, Alsace, runs a family vineyard of eight hectares in one piece, sitting on the slopes of Rittersberg also called "The Mountain of the Knights". This south facing land - south east, enjoys a micro particularly hot and dry. Its geological structure is composed of more or less deep granitic. The Local Rittersberg receives an annual average rainfall of 600 mm of rain and from 1750 to 1800 hours of sunshine: perfect conditions for organic wine quality. Our work is part of an understanding and respect of this exceptional environment, it imposes a controlling yields (38 hl / ha average), a biological control policy and biodynamic against diseases and pests of grapevines. Respect landscape of native wild flora therefore habitats, presence of beehives every year in our vineyard, working the soil with a horse "old" in our oldest plots. This work continues with a wine oriented towards the respect of "regional capital". From the 2012 vintage we engaged in winemaking charter "Organic Wine of Alsace" (Alsace Vinabio).
