Clos Liebau is a 3.2 hectare wine estate founded in 2017 by Sébastien Schwartz-Burkard in Ribeauvillé. This estate produces wines as close to nature as possible with low yields (13hl/ha). The winemaker
As the grandson of winegrowers, Sébastien Schwach-Burkard initially chose not to follow his family's destiny and turned his back on winegrowing. But there are calls that cannot be ignored for long. In 2017, at the age of 33, he created Clos Liebau. A wine estate of 3.2 hectares like a wild garden.
The vines flourish freely and no chemical inputs are imposed on them. In the vineyard as in the cellar, Sébastien's choices are built around the principles of biodynamics, permaculture and agroforestry. The idea is to accompany the plants without constraining or stressing them. Only natural plant-based herbal teas are used to stimulate the vine's natural defences. In the same logic, the plots of land are not ploughed or trimmed: it is nature that imposes its rhythm. Instead of tractors, Sébastien trusts the chickens and the Ouessant sheep to regulate weeds, weed and enrich the soil.
In the cellar, the wines are pressed with old ratchet presses and not filtered. The cornerstone of the winemaking process for Sébastien is the pre-fermentation maceration: "Maceration is the backbone of my work. It strengthens and enriches the wine; we get closer to the fruit and the colours obtained are interesting; I obtain well-structured wines with good length.
Each of the vintages that come out of this estate has its own story, its own character, but above all it is in harmony with what nature offers us.
