The vines used for the Beaujolais Villages appellation surround the crus area on the hills of the northern half of Beaujolais. They tend to have an easterly exposure, and benefit from a sandy granitic soil composed of small stones that capture the sun's heat and carefully diffuse it during the night. In this way, the natural freshness of the fruit is preserved. The grapes are hand-harvested, sorted and very lightly de-stemmed, before undergoing semi-carbonic fermentation in cement and stainless steel vats. Fermentation lasts no longer than 8 to 10 days, to preserve the fruit's freshness and aromas. This is a traditional Beaujolais vinification process.
