After spending his childhood in Bessan Castle, Mathieu joined Rémy and Sylvie on the field, giving them his youth, his new ideas, his recent training, experience in a neighboring believed. He obtained his National Diploma degree in Viticulture and Oenology with honors, and has successfully completed training "trade and marketing of wines and spirits" (C.A.V.E.S. to the Chamber of Commerce of Libourne). June 2010: obtaining the University Diploma of Fitness for the tasting with honors at the oenology faculty in Bordeaux.
