The winemaker

In the heart of Saint Emilion, in the western part of the town, this vineyard has a clay-limestone and sandy and a basement iron pan with iron oxide promote drainage. Raised in a modern vat equipped with temperature control, the conventional fermentation at 28 ° / 32 ° lasts about 21 days and 2 to 3 daily pumping are performed in the beginning of the fermentation in order to extract the best tannins. The wine is aged for 15 to 18 months in oak cask in large medieval cellars cut into the rock at the heart of the village of Saint Emilion.   Harmonious Merlot grape varieties 85%, Cabernet Sauvignon 10% and 5% Cabernet Franc. Fat and fleshy wine are mainly given by Merlot while the Cabernet gives it its smoothness and power.
