The winemaker

The vines are cultivated with a deep respect for our terroir. When it comes to vinification, we favor a parcel-by-parcel approach based on terroir, plot exposure, grape variety and vine age. We intervene as little as possible to allow our terroir to express itself fully. We produce a white wine that is a Vin de France Chardonnay because we appreciate the great Burgundy wines from which we draw our inspiration. Harvested by hand, the wine is aged on lees in French oak barrels for 9 months. We make 3 different red wines: Château Manoir du Gravoux is our red wine, aged exclusively in concrete vats for 12 months, to produce a fruity, supple, gourmet wine that is accessible to all. Château Manoir du Gravoux, cuvée La Violette is a wine made from old vines on the limestone plateau, with 90% Merlot and 10% Cabernet Franc. This wine is then vinified in 1-, 2- and 3-wine French oak barrels for 12 months. This wine offers greater complexity, power and a silkier mouthfeel. Finally, Le Secret du Manoir, from a one-hectare parcel of our oldest Merlot vines on the limestone plateau, is vinified as a whole berry with punching down to promote a smoother, even more precise extraction. This wine is aged for 12 months in new and single-vineyard French oak barrels. This wine is perfectly balanced, powerful, greedy and long, capable of rivaling the greatest Bordeaux wines in a blind tasting!
