The winemaker

Initially, the area was a mixed farming operation: sheep, cows, linen ... The first buildings were as barns for animals and conservation of various annual crops. It was in 1830 that the owners, the Girard family, had built the mansion became the current emblem of Château Saint Antoine.   The vine appeared to St. Anthony only at the beginning of XXth century, planted by Mr. Cassat descendant of Girard. Barns then ceded their place to a winery equipped with concrete tanks, which is a little originality reinforced concrete by the time his first steps. Thus started the wine history of the castle, with the exclusive production of more or less sweet white wine in the image of the entire region, the inter-seas.   In 1953, the wine trade union of the Entre-Deux-Mers asked the INAO, and obtained a decree establishing control on the one hand a type of wine which now must be dry with a maximum of 4 grams of residual sugar per liter, and the other conditions of production with quality control through analysis and tasting. The dry white wine of Chateau St. Anthony then saw its first tastings for obtaining the name "Entre-Deux-Mers." Mr Etienne Aubert, grand-son of Mr. Cassatt, known at the same time the appearance of red wine in the region, white wine after its golden age beginning to decline in consumption, competition from other beverages including aperitif.   In 1970, his son Daniel and Jean-Claude Aubert resume operation and begin the conversion of the castle. The originally formed vineyard white grapes is then gradually replaced by red grapes. The concrete tanks are destroyed at the same time for stainless steel tanks. In the 80s, they establish, for the first time at the castle, thermoregulation, still young technology at that time. Then in the 90s they continue to improve operations. Today their children Vanessa, Heloise and Yohann join and perpetuate the family history of the Castle, centuries old.
