The winemaker
Today, two generations of Chauvet work on the property. Chantal Dalla-Longa daughter of Gerard Chauvet and his son, Gregory, managing the area of 45 hectares. Controls regular maturities correlated with tastings of the grapes in the vineyard with winemakers, allow to harvest healthy grapes with optimal maturity: natural sugar content, acidity and especially polyphenols. In the cellar the grapes are vinified according to traditional Bordeaux methods: stemming, crushing, fermentation vats.
