The winemaker

Domaine Ausereau is located in Samonac, Gironde, on the right bank of the estuary. Fabien Zeitunian founded the estate in 2015 in this region criss-crossed by hillsides. Trained as an oenologist, he now manages the vineyard, vinifications and sales.

The estate's single plot comprises 1.5 ha of Merlot on a southeast-facing slope. The average age of the vines is around fifty years. The soils are predominantly clay at the bottom of the slope, evolving towards clay-gravel as we reach the plateau. Vineyard management consists of encouraging the harmonious development of the vines while limiting the number of treatments to the strict minimum. Soil maintenance consists of maintaining permanent grass cover. Neither chemical weeding nor tillage is practiced on the estate.

In the cellar, the aim is to obtain a red wine from maceration.

The grapes are harvested by hand and transported to the nearby winery.

The grapes are crushed and de-stemmed, then placed in vats. Fermentation is monitored using a mustimeter. At the end of fermentation, the vat is hermetically sealed until Easter, when the pomace is devatted and pressed. Before summer, the wine is blended and bottled by hand, without filtration but after several days of natural decanting.

The wine is then ready to be marketed as Vin de France under the AUSEREAU brand. Ausereau is the Domaine's only cuvée.
