After "essarpé" coppice wood and, Romans planted vines in trenches dug in the limestone (still visible traces today) on this high plateau sunny. The Vineyard is one of the oldest and most reputable formerly of Saint-Emilion. In 1750, Pierre Beylot, Libourne merchant, already speaks of "vintage Sarpe". In 1807, his son Matthew bought at very high prices Sarpe wines that are transported in Brussels in "car". July 19, 1816, Pascal Fourcaud bought 4 barrels of red wine Conseillante (Pomerol) to 362 francs the cask and 3 barrels of wine Sarpe 500 francs the barrel. In 1867, at the Universal Exhibition in Paris, the two owners of Sarpe, Earl of Carles and Ducarpe Aine, are inscribed on the famous list of 36 wines of Saint-Emilion who get the gold medal.
