In a few words ...
The steeply sloping soil is clay-limestone, on asteriated limestone. It is very well drained, but never suffers from acute drought, as the underlying limestone provides a small but sufficient reserve of moisture. The result is exceptional ripening and consistent typicity from one year to the next. Vine cultivation, vinification and conservation are carefully and personally monitored by Jean-Noël Boidron, without the intermediary of a steward. The cellars have been rebuilt to maintain a high standard of cleanliness. The vats are enamelled or made of stainless steel. Their temperature can be regulated to control vinification conditions. Barrels and bottles are kept in an underground cellar where humidity and temperature are naturally constant. The harvest is always hand-picked and sorted, and interrupted if it rains. Maceration is long and modulated according to tasting. External yeasts are never added. The ecological distribution of the various indigenous yeast species is one of the natural riches of this terroir and part of its typicity. It is fully respected.
