Domaine emmanuel giboulot, based in Beaune, is a major player in organic and biodynamic viticulture in Burgundy. Inspired by his father Paul, who pioneered organic viticulture in the region in the 1970s, Emmanuel took over the estate in 1985 and converted to biodynamic viticulture in 1996, convinced that healthy soils are the basis for authentic wines. Today, the estate covers some 10 to 12 hectares spread over several appellations: côte de beaune (with parcels such as grande châtelaine, pierres blanches, combe d'ève), saint-romain, hautes-côtes de nuits, rully 1er cru "la pucelle" and an igp at sainte-marie-la-blanche. His philosophy: limit oenological interventions to let each wine fully express its terroir and vintage. He favors natural yeasts, minimal use of sulfur and aging in old barrels, without new ones. In the vineyard, work is carried out with respect for biodiversity - compost, ploughing, biodynamic preparations - to produce healthy, ripe grapes with just the right degree of ripeness. The estate's wines are characterized by their purity, finesse and straightforwardness.
