In a few words ...
Vines located in the commune of Chitry in the Auxerrois region. Clay-limestone, Kimmeridgian and moderately deep soils. The vines selected for this cuvée face west. The nose reveals aromas of white flowers and lemony notes. The palate is taut and invigorating, with a mineral finish. . 100% aligoté. In conversion to organic farming, mechanical harvest, fermentation in temperature-controlled stainless-steel vats, pressing, use of selected yeasts, malolactic fermentation, pumping-over, ageing in temperature-controlled stainless-steel vats, ageing on lees, clay-limestone soils.
