The winemaker
The Château de Saint-Aubin stands majestically along the road of the Grands Crus of Burgundy. Ideally located south of Beaune, in the appellation area that adjoins the eponymous village, the Château de Saint Aubin is today as famous for the wines it produces as for the hotel and wine tourism experiences it offers.
The Château de Saint-Aubin, admittedly less well known than its illustrious neighbors at Château de Pommard or Meursault, has nothing to be ashamed of next to them. It remains one of the oldest in the region, with over 300 years of history. Owned in its early days by the Countess of Trébon, a descendant of a musketeer of Louis XIII, the estate then changed hands several times.
Since 2010, it is the Maison Prosper Maufoux that manages the Château Saint-Aubin. The latter sits on a reputation that is no longer to be made. In 1960, a notary by the name of Prosper Maufoux decided to change his career path and started trading in wine. After the purchase of a mansion in Santenay, and a partnership signed in 1947 in the United States, the name of the House became a reference in France and across the Atlantic.
Today, it is the Piffaut family that is in charge of the historic house. Following the purchase of the Château in 2019, a new path has opened up for the estate, between hotels and wine tourism experiences.
The Côte de Beaune flows south from the Côte de Nuits. The two together form the very prestigious Côte d'Or. This one is planted almost exclusively with Pinot Noir and Chardonnay. However, in terms of prestige (even if, once again, many exceptions exist), we tend to schematize it as follows: the best reds of Burgundy come from the Côte de Nuits, and the best whites from the Côte de Beaune.
The Château de Saint-Aubin is not among the exceptions, on the contrary it cherishes the only Chardonnay, the king grape of the region. Located south of Beaune, the estate enjoys a slightly sunnier terroir, with complex soils from a combination of limestone, clay and red clay. The vines, managed in sustainable viticulture, are for some located a few meters from the Château, within the Climat Clos du Château, classified Premier Cru of the AOC Saint-Aubin.
The winemaking by the Maison Prosper Maufoux reflects the ancestral heritage of Burgundy and the know-how for which it is renowned. A distinction must be made between Prosper Maufoux wines, spread over different appellations throughout Burgundy (Chablis, Pommard, Bouzeron ...) and planted with traditional Burgundian grape varieties. The wines sold under the name Château de Saint-Aubin Prosper Maufoux, on the other hand, come only from the vicinity of Saint-Aubin and are made from Chardonnay only.
This is a dry yet generous white wine, which the bâtonnage work and its aging in oak barrels has softened and made greedy. The delicate notes of white flowers and almonds make it the perfect match for a shrimp tartar with lemongrass and ginger, or a codfish backbone plancha over a creamy asparagus and hazelnut risotto.
